This is a wonderful recipe for a quick and nourishing breakfast! It's even fancy enough to serve at your next Sunday Brunch and it's guaranteed to rock your taste buds. 

A Bit Kale Knowledge

Kale is a super-duper nourishing and low oxalate food. You can cook, blend it, massage it, and serve it in a stew. It's packed with antioxidants, which can help to ward off many forms of cancer. One cup of kale contains only 36 calories, and 15% of the daily requirement of calcium and vitamin B6, 40% of magnesium, 180% of vitamin A, 200% of vitamin C, and 1,020% of vitamin K (one of the key players in thwarting off cancer). It is also a good source of minerals copper, potassium, iron, manganese, and phosphorus. With high calcium and magnesium, kale also helps to protect against osteoporosis, arthritis, and bone loss.

EGGS & GREENS WITH SMOKED SALMON + TURMERIC SAUCE

This easy eggs recipe will blow your mind. Top the whole thing with smoked salmon and avocado and you have a home run recipe. I typically double the dressing recipe so that I savor it on salads for a few days to come.

EGGS & GREENS WITH SMOKED SALMON AND TURMERIC SAUZE

For The Eggs & Greens:
  • 4 Large Eggs
  • 5 Ounces Baby Kale, chopped
  • 2 Tablespoons Lemon Juice
  • 2 Tablespoons Olive Oil
  • Sea Salt & Fresh Cracked Pepper
  • 1 Avocado, Thinly Sliced
  • 4 Slices Smoked Salmon

For The Sauce/Dressing:
  • 2.5 Tablespoons Local Honey
  • 2 Tablespoon Dijon Mustard
  • 1 Myers Lemon, juiced
  • 1/2 teaspoon Ground Turmeric
  • 1 Cup Olive Oil
  • Sea Salt & Fresh Cracked Pepper, to taste

Instructions:
  1. In a medium mixing bowl, toss the chopped Kale with the lemon juice, olive oil and season with salt and pepper. Massage for 1-2 minutes.
  2. Combine the honey, mustard, lemon, turmeric and salt and pepper, to taste, in a bowl. Slowly whisk in the oil.
  3. Plate the kale and top it with the sliced avocado and salmon. Top with the poached eggs and drizzle with turmic dressing. Season with salt and pepper and serve immediately.
